A quality junmai ginjo designed to drink cold with a beautiful lemony acidity that you normally don’t find in sakes. This is due to the toji using a small amount of white Koji (not usually used) in addition to the usual yellow Koji. This produces a slight citrus effect. Aromas of apple and citrus with a nice light golden colour. Goes well with fresh oysters,
a seafood pasta or fish and chips.
