A Pioneer of “Natural Liquor”

Founded in 1711. Niida Honke's 18th in line head brewer (‘toji’), Mori san, graduated from the Department of Brewing Science, Tokyo University of Agriculture. He became president at the age of 28 in 1994. The brewery has been a pioneer of “natural liquor” since 1967, selling all natural (Junmai MI) rice sake. At present, all liquor is junmai using pesticide-free natural rice and natural brewing techniques. An agricultural Cooperative was established aiming to connect Japanese culture to the next generation as a sake brewery that protects Japanese rice fields by expanding production and sales channels for natural rice.
