Koshigoi
Yoshino-brewing Shuzo's water is sourced from a mountain spring.
Their water comes from the mountain via a horizontal well (cave) hand-built by their predecessor. The water is then collected and stored before it is used in the brewing process. Many customers associate well water with groundwater; however, groundwater in this region is high in iron, making it unsuitable for the brewing process. The water from a mountain spring is soft.
They believe that their predecessor dug multiple wells on the property and discovered that brewing good sake from well water was difficult. It is assumed that after much deliberation, he chose to use spring water from a nearby mountain that he owned. The cave measures about 150 metres in length.

Daiginjo grade umeshu, that is it is made using the best sake polished to at least 50% and uses the best sake rice, Yamadanishiki, which gives it a superior smooth flavour. Uses local Chiba fruit.
