Little pocket rockets from Gozenshu
Gozenshu sake, is made with delicious water and brewer's rice. The Tsuji family founded Tsuji Honten in Katsuyama town, Okayama, Japan, in 1804. Soichiro and Maiko Tsuji, today's brother and sister team, are the seventh generation brewers (Maiko-san is one of Japan's few female toji!). The brewery began
by producing sake for the Miura family, local lords
who ruled over Katsuyama.

Partially filtered leaving some of the rice lees still in the bottle, this sake is zesty/lively flavoured and has a slightly chewy texture. An ancient bodaimoto method has been used to make this sake, which tends to yield slightly earthier and sourer sake. A fresh fragrance and a sweet and sour flavour with notes of zesty lemon, passion fruit and pepper.

Kijoshu is a special rare brew technique where sake is added to the final stage rather than water, resulting in a succulent soft sweeter taste. Using their bodaimoto technique to promote acidity Gozenshu prevent it
from being cloying.

Shiro White
Named after the word "Shirotae," a type of white cloth made of tree bark; shirotae is a word now used mainly in the realm of Japanese classic poetry to express the color white that has an other-wordly mysteriousness. Like a beautiful shirotae, this wine is soft and pliable; with its light touch, Shiro is a perfect, easy-going, everday sake. Ideal for lunchtime sake-sipping. A "session sake" light enough
to enjoy all night.
Shiro sake is a junmai ginjo, made with sankei nishiki and hitogokochi rice varieties, polished 55%. Goes well with fresh greens salads with citrus accents, grilled shrimp & chicken, dairy and cheese dishes.
