Why is Namazake so special ?

Namazake is a seasonal favourite in Japan. Namazake announces the arrival of spring at the end of the winter brewing season. Most sakes are pasteurised after brewing to eliminate microorganisms and deactivate enzymes, but Nama-zake is an exception.

Namazake is fully unpasteurized, which means it's robust and fresh, with a distinct scent and flavour when compared to other sakes.
