Sake royalty. Much can be said about this tokebetsu (special) junmai but space precludes us. Needless to say that all Katsuyama sake is not pressed using traditional 'yabuta' method but using the much slower (and better) 'shizuku' method. Instead of one 'pressing' per day they are limited to one 'dripping' a week. The quality shows. Unfortunately so does the price. But if you can afford it it is a wise choice.
