Katsuyama En Tokubetsu Junmai 720mL


 Sake royalty at affordable price. Much can be said about this tokubetsu (special) junmai but space precludes us. Needless to say that all Katsuyama sake is not pressed using traditional 'yabuta' method but using the much slower (and better) 'shizuku' method. Instead of one 'pressing' per day they are limited to one 'dripping' a week. The quality shows. Unfortunately so does the price. But if you can afford it it is a wise choice.

'En' has a hint of sweetness and rice driven umami, with a short crisp finish of a nashi pear crunch. For optimum terroir expression, along with the local rice an indigenous Miyagi yeast strain is used with soft water sourced from water flowing from popular ski-resort mountain Izumigatake for a very Miyagi inspired representation.

Smell: lychee, melon, cucumber very light fragrant
