 Matches perfectly kaiseki cuisine. Produced in small batches by centrifuge (60 litres at a time so extremely time consuming but produces exceptional quality - there is no 'yabuta' press on the site of Katsuyama.). Amazingly complex. It is a “centrifuge” sake, meaning the mash is separated from the sake using an expensive, space age centrifuge machine. Arguably one of the best sakes in the world.
