Organic rice blessed with the sun and the motherland grows strongly ‚ its soul will not be lost even after many brewing processes. We have a strict organic Nihonshu brewing process, carefully select machines, substances, and even materials for a broom. We pay close attention to every detail to produce our products. Take a sip of the organic sake ‚Tentaka‚ and feel the rice's sweetness and flavour.
Although this particular sake is not certified organic it is still made with A-grade area Yamadanishiki.
Tasting notes - Junmai Daiginjo
‚If it isn't dry, it ain't sake.‚These were the words, more or less, of the founder of this sake. Tentaka sake is indeed generally dry. But nowadays, it has a nice character and solid foundation of flavour as well. A very light and fruity nose that almost jumps out at you, but with a mature and confident mellowness.
This is not certified by Japanese body as organic but is made with organic rice and in organic way in certified organic shuzo. Please consider this as a 'natural sake'.
Food matching
Best with more delicate dishes such as grilled scallops or vegetables, sashimi, any food that is light with herbs. Salads using lettuce, cabbage (not mayo) or English spinach. Excellent with cheeses.
