Tentaka Shuzo, Co., Ltd is certified as an organic brewery by Japan, the United States, and European Union. It is one of only 4 in Japan.
Organic rice blessed with the sun and the motherland grows strongly – its soul will not be lost even after many brewing processes. We have a strict organic Nihonshu brewing process, carefully select machines, substances, and even materials for a broom. We pay close attention to every detail to produce our products. Take a sip of the organic sake “Tentaka” and feel the rice’s sweetness and flavor.
Although this particular sake is not certified organic it is still made with the same rice and in the same shuzo (brewery) with the same exacting methods and processes, but this product has not been certified by the Japanese Organic council. Please consider this as a 'natural sake'.
Tasting notes - Junmai Nigori
“If it isn’t dry, it ain’t sake.” These words are from Tentaka's founder and it is certainly true of this nigori sake. Usually a nigori will be sweet but this is unlike most in being extremely dry. The body and mouthfeel are therefore more pronounced and provide a different emphasis for the taste.
Excellent with cheeses, perhaps a soft blue brie or a not too matured cheddar. It is a great foil to zuke style pickles. Also would match vegan desserts that are not too sweet. For the adventurous try matching with an Indian curry. You may be surprised.
