Taiheizan Shingetsu 55. 「神月55」純米吟醸 

Essence of “Shingetsu” is in water which is from a natural spring in the UNESCO World Heritage Shirakami mountain range, the largest virgin beech forest remaining in East Asia. The mountains stretch from northwest of Akita into further north in Aomori. The water from the Shirakami mountains is known for its super softness. Brewed using the Akita kimoto method, this is similar ginjo of to its brother the Chronicle. It comes in Japanese newspaper wrapping.

The rice is polished at a higher rate of 55% which delivers a slightly more fruity and smooth flavour. The yeast used for Shingetsu55 is original of Akita, “Akita snow country yeast” Its fruity aroma can stand in different climate conditions.
Food pairing: Garfish nigiri sushi (brushed with grated fresh ginger). Salmon toro nigiri, otsumami. Cuisine with light sauces.
