Koshigoi Daiginjo 720ml
It has an unique umami flavour, smooth, clear and aromatic. This regularly wins gold in the prestigious Japanese National Awards (which is conducted by blind tasting). Also served on first class flights on ANA.
A 'straight' daiginjo (versus a junmai daiginjo) differs in that a very small amount of 'jozo' (maker's alcohol) is added into the moromi around 8 hours before pressing. This helps dissolve the mash even further and extracts flavours that would otherwise be lost. It also gives it aroma. A very subtle and eminently enjoyable nihonshu. Limited stock.
