Kokuto shochu is a type of Japanese distilled spirit made from traditional dark sugar known as "kokuto" in Japanese. It is regionally exclusive (or unique) to the Amami Islands, located in the southern part of Japan, and is known for its unique flavour and aroma.
Kokuto shochu is made by fermenting a mixture of steamed rice and water with white koji mold, which is then distilled and blended with kokuto sugar. The result is a smooth, slightly sweet spirit with a rich, caramel-like flavour.
Kokuto shochu is usually consumed neat or on the rocks, and it can also be used as a base for cocktails. It has gained popularity in recent years as a healthier alternative to other alcoholic beverages due to its lower calorie and sugar content.
This particular shochu however is ‘genshu’ which means ‘undiluted’. Usually shochu when distilled comes out at high alcohol percentages and is ‘cut’ (diluted) back to 25%. This particular shochu however is not. Enjoy the unique strong flavour. Good to use in cocktails.
